Mozzarella of Fior di Latte (ital. Mozzarella Fior di Latte) — one of the most known Italian cheeses.
It is that "classical" mozzarella floating in a brine. Outside at a mozzarella thin (about 1 mm) a brilliant and smooth thin skin with small noticeable hillocks in that place where the head was torn off from the general cheese weight. On the internal structure the mozzarella a little layered also does not contain vials of air. It is easy to distinguish a good mozzarella — when cutting cheese follows from it a little white liquid.
Mozzarella balls elastic and soft. The form and the size of a mozzarella happen different: big balls — "bokkonchin", balls it is slightly less, of the size of large sweet cherry — "chilyedzhin", and absolutely small — "hawsers".
