Ricotta (ital. Ricotta) — a kind of serumal cheeses, is made in different modifications.
Ricotta is cooked from the sweet serum remaining after preparation of a mozzarella. Besides serum also milk (in some grades of ricotta use milk of buffalo cows, sheep) is added.
This cheese also smoke, however the most widespread option — fresh ricotta. In it — the most high content of moisture. On a consistence ricotta reminds gentle cottage cheese with small lumps.
Ricotta received the unique sweet taste thanks to sweet serum in which presence of lactose is equal to about 2 — 4%.
Ricotta undoubtedly is considered multipurpose cheese: it is used in preparation of desserts, main courses, salads. It is the excellent stuffing for all types of pies, ravioli and pastes impacting to a dish juicy and gentle relish.
