The egg powder is received drying of egg mixture in spray driers. Air temperature in such dryers reaches 130 - 135 °C. However, the egg mixture when drying quickly loses moisture, and its temperature at the same time does not exceed 44 - 47 °C. It is very important for the subsequent use of egg powder as under these conditions of squirrels of egg is not curtailed, and the egg mixture when mixing with warm water is well recovered. The egg powder is hygroscopic - it intensively absorbs water from air, as a result its quality sharply decreases. In it grains and lumps are formed. Organoleptic indicators (taste and smell) worsen.
