Description
Fish preserved food is understood as the product which passed the corresponding stage of processing will merge with addition of sugar and spices and sustained before maturing during further storage. For preparation of preserved food use fresh or light-salted fish of generally seldevy and anchousovy types. The salty semi-finished product directed to production of preserved food has to contain no more than 10% of salt.
Unlike the sterilized canned food the fish preserved food packaged in tight banks is not exposed to thermal treatment therefore they are unsterile and rather low-resistant products, especially at storage in the conditions of room temperature. For the purpose of increase of firmness of preserved food add to banks in a small amount of antiseptics — benzoynokisly sodium. However contents it is allowed no more than 2,6 g on 1 kg of a product. Because preserved food is low-resistant products, it is necessary to store them at the lowered temperatures close to 0 °C.
