Propionic acid (propanoic acid, methylacetic acid, E280 preservative) — colorless caustic liquid with pungent smell. Propionic acid (from Greek "protos" — the first, "pion" — fat; ) it is called so because it is the smallest H(CH2)nCOOH the acid showing properties of fatty acids. Molecular formula of C2H5 - COOH.
Self - ignition temperature is 440 °C.
Mixes up with water and organic solvents.
On chemical properties — the typical representative of saturated carboxylic acids; forms ethers, amides, acid halides etc.
Propionic acid and its derivatives apply in production of herbicides (propyl alcohol, dikhlorprol), pharmaceuticals (ibuprofen, fenobolin, etc. ), fragrant substances (Benzylium - phenyl - geranyl - linaloil - propionates), plastic (for example, polyvinylpropionate), solvents (propyl - butyl - pentylpropionate, etc. ), vinylplasticizers and surfactant (glycol ethers).
Propionic acid interferes with growth of mold and some bacteria. Therefore the most part of the made propionic acid is used as preservative in the products consumed by the person and in products for animals. In products directly propionic acid, or its ammonium salt (ammonium propionate) is applied to animals. In the products consumed by people, especially in bread and in other bakery products, propionic acid is used as sodium (sodium propionate) or calcic (calcium propionate) of salt.
